What I Spent

Completely unimportant, but please note my Snoopy badge holder AND my Snoopy puffer coat badge pin.

Kristen at work.

I spent:

  • $13 at Safeway
  • $11 on subs

So, a mere $24.

What We Ate

Saturday

I came home from work, made a bowl of oatmeal, showered, and went to bed.

oatmeal.

Sunday

This was the night we got our Firehouse subs (with one being free!)

Monday

I made some mashed potatoes, sauteed fish, and a green salad.

fish and mashed potatoes.

Tuesday

I made some chipotle marinated chicken with the plan to pack it for lunch, but first we used it for a green salad at dinner.

chicken salad.

Wednesday

I thawed some of the stuffed shells and had Zoe throw them in the oven before I got home from work.

stuffed shells.

Thursday

At work, I had a late but solid lunch of leftover stuffed shells + other stuff:

packed lunch.

And when I came home, I was not terribly hungry.

Soo...I ate a big bowl of (Aldi) raisin bran and went to bed.

Friday

I need to figure this out; I'm gonna try to maybe hit up a grocery store today because as you can see, I did not shop this week! But I have heard many shelves are cleared in anticipation of the coming snowstorm, so who knows what I will find?

Luckily, I DO have a chest freezer and pantry, which means we are never on the verge of starving. Our meals could get weird, but we will not go hungry. 😉

What did you have for dinner this week?

fridge door

I spent:

  • $7.50 at Safeway for a rotisserie chicken
  • $35 on a Hungry Harvest box
  • $11 at Giant
  • $77 at Aldi

That makes $130.50 for me this week. And my fridge is a little full right now, which means I'm gonna have to be on top of my game this week if I want to avoid food waste.

(and we know I always dooooo want to avoid food waste!)

What We Ate

Saturday

We had a food truck at work with free food for employees, and I wanted to get a sandwich there after work. But the line was quite long and it was my third shift in a row, so I just decided to go home.

The sandwich would have been free, but 30 minutes is too long to stand around outside waiting.

So, I came home and made a sandwich.

sandwich in toaster oven.

And then I ate it and happily went to bed.

sandwich.

A solid decision in the end.

Sunday

I'm drawing a blank. I kind of think I ate some squash soup? But honestly, I am not entirely sure!

Monday

I made a green salad with avocado and some seasoned chicken, with some toasted pita on the side (because I found a few in the freezer that needed to be used.)

green salad with pita chips

Tuesday

I made some stuffed shells with a green salad on the side for the night.

By the way, here is the stuffed shell recipe I use; quite a few of you had asked after I wrote about these the other day.

stuffed shells.

Wednesday

After work, I made some French toast.

sliced bread.

Thursday

I had a short day (just 8:00-1:00) because it was a nurse residency class day.

dinner table.

So, I had time to make a quick dinner that was basically these Korean beef lettuce wraps, except as a salad. And I cooked up some frozen potstickers from Aldi.

Friday

I'm working a regular 12-hour shift today, but I'm unsure if Zoe will be here tonight. If she's not, I might just have cereal and call it good. 😉

Kristen.
Not the techiest of humans right here

This week, I spent:

  • $38 at Aldi
  • $82 at Aldi (two separate stops!)

Sooooo, $120, and it was all at Aldi. 😉

What We Ate

Saturday

A friend treated me to some pizza and sent me home with the leftovers.

Sunday

Leftover pizza, reheated in the toaster oven.

Monday

Chicken quesadillas, with fruit salad on the side.

quesadilla.

Tuesday

A repeat of Monday because there was more chicken to use up!

Wednesday

I made chipotle chicken salads with the express plan of using extras for my work lunches.

chipotle chicken salads.

Thursday

I grabbed some homemade burgers from the freezer before work and put them in the fridge to thaw. Then when I came home, I just grilled them, and that made for a super quick meal.

grilled burger.

Friday

I think I will make some French toast for dinner after work because I need something super quick!
